Many Mozart finales are sublimely beautiful. Look at / listen to the finales
of each act of all your favorites and see which strike you as performable and
fit your group. Also, Bernstein's Candid has a gorgeous ensemble about
making your garden grow... It's available in more than one Bernstein
anthology I've purchased. Gosh, with five sopranos, maybe you should look
into both Suor Angelica and Dialog of the Carmelites. Then Suor Angelica's
sister (pun intended of course) opera, Gianni Schicci is ensemble friendly.
It sounds like a lot of fun: your preparations and the tour!! Enjoy!!!
