You could do the "Rejoice Greatly" (with or without the preliminary
recitatives" from MESSIAH. Pretty dazzling stuff.

You might also consider the "Dies Natalis" by Gerald Finzi. Boosey &
Hawkes publishes a piano/vocal reduction of this work (which was written
for soprano solo and string orchestra), that would work with organ.
It's probably too long to do in its entirety, but take a look at it - it
may be possible to find an elegant excerpt.

There is a whole series of solo motets for soprano and piano by Paul
Hindemith that might work for you. Specifically, take a look at:
"Cum natus esset"
"Erat Joseph et Maria"
"Angelus Domini apparuit"
and "Pastores loquebantur"

Some other possibilities:

Henri Busser: Le sommeil de l'enfant Jesus

Alan Hovhaness: Christmas Song (Watchman tell us of the night), op 34

Claudio Monteverdi: Exulta filia Sion

W.A. Mozart: Et incarnatus est (from Mass in C Minor, K.417a)

Thea Musgrave: A Song for Christmas

Henry Purcell: The Blessed Virgin's Expostulation, Z196 ("Tell me, some
pitying angel") (there is also a Britten/Purcell "realization" of this)

Ned Rorem: An angel speaks to the shepherds

William Schuman: The Lord has a child

Es en balde, majo mio, que sigas hablando
porque hay cosas que contesto yo
siempre cantando:
Tra la la...
Por mas que preguntes tanto:
tra la la...
En mi no causas quebranto
ni yo he de salir de mi canto:
tra la la...
