How about something old with a new twist ? Handel, Messiah, "Come unto him".
Sing the duet version, alto and soprano parts. Sing the alto (first) as
written. At the modulation, where the soprano part starts, ornament the
vocal line, as it is a repeat of the alto line in a new key. It moves
slowly in compound metre, which makes plenty of room for ornamentation . I
have heard this done up quite well.

The soprano solo in the Mozart Mass in C-minor has a great high C and lots
of other good licks. A decent organ can play the flute ? obbligato.
