I wouldn't say "show up and yodel" necessarily. The regional companies in the SF Bay Area usually ask auditioners to at least call and make an appointment. Some ask that we send in a resume and headshot first.
"All roles are open" means that the ROLES have no official occupants, not that the auditions are necessarily open. The notices in "Callboard" (Bay Area theater magazine) will occasionally have a line on the order of "All roles open *except* Harold Hill," or "Carmen and Don Jose cast, other roles available."
Some companies have "season auditions" that are true cattle calls for anyone and everyone. (It's required for theater companies with Equity contracts.) But the chance of actually getting hired from one of these auditions is, well, maybe a little better than hitting a multi-million-dollar lottery.
