Some of my favorites:
1. In the Shadow of the Stars (already mentioned), still available, I think.
2. The Making of Opera: The Creation of Verdi's La Forza Del Destino -- this is a documentary about a Canadian Opera production of Forza, from conception through opening night. Covers chorus rehearsals, principal rehearsals, costume and set design/creation, problems, etc. Very well done, and still available.
3. Tosca: I Live for Art -- You may have problems finding this one. It's a series of interviews with 15 divas who've sung the role over the years. A lot of good insight into the role and preparation required to sing it.
4. Tosca's Kiss (Il Bacio di Tosca): Memories of the Italian Opera by Singers and Musicians of the Casa Verdi, Milan -- just what the title says. These are retired opera musicians (singers as well as orchestra members), who share their feelings about their careers, their lives onstage, etc.
That's all I can think of right now.
