Well, I was going to refer you to "her" page on the web site of the
Copenhagen opera,

but alas, it's only available in Danish. There's a picture, though.
Here's a quick translation of the info (comments in () are by me):

Anette Bod was born in Denmark in 1966, is educated at Det Jyske
Musikkonservatorium (that's the conservatory in Århus, Denmark) and later
studied with Kirsten Buhl Møller in Copenhagen.

In autumn 1998, Anette Bod sang the mother in "Kronbruden" by Ture Rangström
at the Malmö Musikteater (that's in Sweden), and the next year she sang her
first Carmen in Biel (in Germany).
In 2000, she sang Carmen first in GöteborgsOperan (also Sweden), and again
with Folkoperan in New York. She has sung Maddalena in Verdi's Rigoletto in
Malmö, and participated in many oratoria performances in Sweden and Denmark.

Carmen is her debut on the Det Kongelige Teater (the opera house in
Copenhagen), and in the same season she sings Amneris in Verdi's Aida in
Malmö.

There's no references to any recordings. My guess is there aren't any.
You might consider a short trip to Malmö. It's only a bridge away from
Copenhagen.
