As a singer, I always learned that Latin (Church Latin) was pronounced with the rules of the vernacular of where it was being sung. So that there were German Latin rules, French Latin Rules, English Latin Rules, and Italian Latin Rules. Most of the choir directors I have worked with have always used Italian Latin, in which "h's" are silent. (Except for mihi, which is usually [mi: ki])
I did hear Anonymous 4 sing an English mass where they sang [d i: zu] for Jesu. (Sorry I don't have the letter for the soft j sound on my keyboard, but hopefully you get the idea.)
I have never officially studied Latin diction, however!
