Check out "Favorite Christmas Classics for Solo Singers" (pub. Alfred). There's a beautiful arrangement of "O Come, O Come Emmanuel" with flute; that always makes a nice advent piece.
For Thanksgiving, check out some American traditionals like "Simple Gifts." And of course, patriotic songs like "America the Beautiful" work well too.
