I'm so glad someone mentioned "The Bird's Song" from Vaughan Williams' THE PILGRIM'S PROGRESS (which I was lucky enough to find an unplayed recording of at a local thrift shop recently) - it is one of my very favourite psalm settings.
I'm interested to learn what are some other posters' favourites (not just of Psalm 23 - but of all psalms). Here are some of mine:
Michael Head: Three Psalms (dedicated to Marilyn Horne)
Arthur Honegger: Psaume CXXXVIII, Psaume XXXIV, and Psaume CXL (and also his "Le Roi David" - an symphonic psalm oratorio)
Alan Hovhaness: Out of the Depths; also his Psalm 23 setting in his Symphony Number 12.
Leonard Bernstein: A Simple Song from MASS (not entirely a psalm setting - the first part is more of a hymn, the second part is an amalgamation of psalm texts, including the complete Psalm 121. (also his Chichester Psalms)
Heinrich Schuetz: Symphonia Sacra (Psalm 40)
Stephen Schwartz: On the Willows from GODSPELL (Psalm 137) (I also love the traditional folk setting of this Psalm, usually performed as a 3-part round, and available online at: http://www.numachi.com/cgi-bin/rickheit/dtrad/lookup?ti=BABYLN&tt=BABYLN)
