Let me recommend Holst's Four Hymns from the Rig Veda. Rarely done, but
superbly written.

Also, if they are still in print, Persis Vehar has Three Songs of Spring on
texts from Song of Songs, Heine,and Shakespeare. They were premiered by the
women of my high school choir in 1977. (Peris Vehar is also the wife of my
high school choir director!) Worth looking into!
